My co-worker, Linda, and her husband have just started their journey to healthier lifestyle. They tried to go vegan, but since you can't eat anything in the vegan lifestyle Linda almost starved to death, plus she ended up cheating on her new diet everyday and her vegan diet was more carnevourous than she had originally planned. I have to say that I was being an enabler and secretly buying her Toasters crab sandwiches. :( So once Linda confessed that her vegan diet was not going very well, they decided to just go vegetarian. Over the last couple of days it has been going very well for them. Linda even made these delicious and healthy vegetarian chips that she brought with her to work and let me eat half the bag. I am not sure if that was her intention but they were super good and I have no self control. I loved them so much that I really wanted to share her super awesome creation for healthy and very cheap chips.
Homemade tortilla chips
1 bag of corn tortillas
1/2 tsp chilli powder
1/2 tsp salt
zest of 1 lime
1/4 tsp garlic powder
Cut tortillas into triangles. Place spices, lime zest, and tortilla triangles in a ziplock bag and shake to coat tortillas. Place on a cookie sheet lined with wax paper to prevent sticking to the pan and bake for about 5 minutes on each side, longer for a crispier chip.
